Spicy Oyster Mushrooms w/Cashews

Ingredients:

½ lb oyster mushroom

½ c cashews

½ tbsp fresh ginger

1 tbsp vinegar

1 tbsp chili sauce

1 tbsp chili flakes (optional)

2 tbsp cooking oil

1 tbsp minced garlic

1 med chopped onion

1 tbsp soy sauce

1 tbsp tomato sauce

1 tsp sugar

 

Shred mushrooms into small pieces. Stir fry mushrooms in oil for 2 to 3 mins on medium heat. Add cashews and stir fry 1 min. Add garlic, ginger and onion and stir fry 1 min. Stir in vinegar, soy sauce, chili sauce, tomato sauce, chili flakes and sugar. Salt to taste. Serve over rice.
