Mushroom Pasta with Cream Sauce

Ingredients:

½ pound uncooked pasta

3 Tbsp butter

1 pound mushrooms

3 cloves garlic, chopped

½ tsp salt

½ tsp black pepper

½ C heavy cream

¼ C parsley, chopped

¼ C cheese (like parmesan or mozzarella)

 

1. Cook pasta. Drain and set aside ½ C of pasta water.

2. While pasta is cooking, melt 1 Tbsp butter in a pan over medium heat. Tear mushrooms into bite-size pieces. In batches, fry mushrooms in a single layer until both sides are golden. Transfer to a plate until all are cooked.

3. Transfer all fried mushrooms back in the pan.

4. Add in garlic, salt and black pepper. Cook for 1-2 minutes.

5. Add in heavy cream, pasta water and parsley. Bring to a boil. Let simmer for 5 mins.

6. Toss in pasta and let cook together for 2-3 minutes. Taste and add more salt if needed.

7. Serve immediately with grated cheese.
